Bramley Bursary 2009

The Bramley Campaign will be joining forces with a top Michelin-star chef to offer one of your students the opportunity to win an exclusive work placement in their restaurant’s kitchen.

We are inviting catering students from selected colleges, including yours, to devise exciting new dishes using Bramley apples, beloved by chefs the world over.

Those colleges wishing to take part will be asked to incorporate the challenge into their Autumn 2008 term.

Bramley apples are loved by chefs because, unlike other apples, they have a light, fluffy texture and distinct flavour which is retained after cooking.

Sweet or savoury, we want you to come up with a brand new Bramley recipe.

The key dates are:

1st September 2008 - Competition formally opens

12 December 2008 - Deadline for submission of entries to The Bramley Campaign

16 January 2009 - Notification of 10 finalists

April 2009 - Final ‘cook-off’ held at Westminster Kingsway College, London

Bramley Bursary 2007

Prize: The winner of the Bramley Bursary will receive a once-in-a-lifetime placement at the Michelin-star restaurant and a cash prize of £1,000. The winner’s college will also receive a £500 prize. Two runners-up will receive £250 each.

Enter Bramley Bursary Competition

NB Basic kitchen equipment and Bramley apples will be provided at the finals, however, finalists will be asked to bring their own additional ingredients, serving dishes and any specialist equipment. Finalists are allowed to bring mise-en-place.

Please state clearly whether your dish comprises a sorbet or ice cream so that freezing time can be taken into consideration – sorbets and ice creams may be prepared in advance.

The competition will be judged by a panel of experts.

Students will have two hours to prepare their dishes.
